Chilli coconut poached chicken with greens and noodles

This noodle recipe is packed full of flavour and a delicious way to eat your green veggies. Green beans are rich in vitamins C, K and fibre, making them an excellent choice for supporting immunity.

Serves: 4
Prep Time: 10 minutes
Cook Time: 25 minutes

Ingredients

  • 1L salt-reduced chicken stock
  • 400mL tin coconut milk
  • 2 tablespoons chilli sauce
  • 1 lemongrass stalk, bruised
  • 4 garlic cloves, bruised
  • thumb-sized piece of ginger, thickly sliced
  • ½ bunch of coriander, leaves picked
  • 2x 200g chicken breasts
  • 180g egg noodles
  • 1 bunch of bok choy, quartered lengthways
  • 250g green beans, trimmed
  • 1 tablespoon fish sauce
  • 2 tablespoons brown sugar
  • juice of 1 lime
  • 2 tablespoons crispy fried shallots
  • chilli oil, to serve (optional)

Method

  1. Place chicken stock, coconut milk, chilli sauce, lemongrass, garlic, ginger and coriander stems (reserve leaves for garnish) in a large saucepan. Bring to the boil over high heat, then add chicken. Once broth has returned to the boil, remove from heat and cover with a lid. Set aside for 20-25 minutes for chicken to cook through.
  2. Meanwhile, bring a medium saucepan of water to the boil. Cook noodles according to packet instructions. Add bok choy and green beans to blanch for the final minute of cooking. Drain and divide between serving bowls.
  3. Remove chicken from broth and slice or shred with two forks. Season broth with fish sauce, brown sugar and lime juice. Return to heat if necessary, then ladle over cooked noodles and greens. Garnish with crispy fried shallots, coriander leaves and chilli oil.

Cooking Tip: Poaching is an excellent way to cook and enjoy chicken breast! Whilst this cut is typically avoided for being dry, this gentle cooking method helps to retain moisture, resulting in juicy, tender chicken!
