Prawn and peach salad with Nahm Jim dressing

This fresh Thai-inspired salad combines succulent prawns, sweet peaches, crisp vegetables, and aromatic herbs in a zesty nahm jim dressing. Light, vibrant, and on the table in 15 minutes!

Ingredients

  • 2 Lebanese cucumbers, cut into bite sized chunks
  • 3 yellow peaches, cut into wedges
  • 3 radishes, thinly sliced
  • 4 spring onions, thinly sliced
  • 24 prawns, cooked and peeled
  • 1 bunch mint, leaves picked
  • 1 bunch coriander, leaves picked
  • ½ bunch Thai basil, leaves picked
  • 2 avocado, sliced

Nahm Jim dressing:

  • 2 tablespoons fish sauce
  • Juice of 2 limes
  • 2 tablespoons brown sugar
  • 1 clove garlic, finely chopped
  • 1 long green chilli, finely sliced

Method

  1. To make the Nahm Jim, stir all ingredients together and set aside to allow flavours to develop.
  2. Combine cucumber, peach, radish, spring onions and prawns in a bowl. Just prior to serving, toss through mint, coriander, Thai basil and the Nahm Jim dressing. Arrange salad onto a platter, top with avocado slices, then serve.

Cooking Tip: This light summer salad can easily be made more substantial with the addition of rice noodles or roasted chunks of sweet potato.
