Jamaican salmon with pineapple salad & coriander sauce

Ingredients

  • 500g side of salmon
  • 1 tablespoon ground cumin
  • 2 teaspoons onion powder
  • 1 teaspoon allspice
  • 1 teaspoon brown sugar
  • 1 tablespoon olive oil
  • pinch of salt
  • 1 bunch of coriander, leaves and stems finely chopped
  • 1 green chilli, finely chopped
  • 1 garlic clove
  • juice of 2 limes
  • ¼ pineapple, skin and core removed, cut into wedges
  • 1 Lebanese cucumber, thickly sliced
  • 3 spring onions, thinly sliced
  • ½ bunch of mint, leaves picked
  • 2 baby cos, leaves separated

Method

  1. Preheat oven to 150°C (fan-forced). Place salmon on a lined baking tray. Combine cumin, onion powder, allspice, brown sugar, one tablespoon oil and a generous pinch of salt in a small bowl. Pour over salmon, then bake in oven for 12-15 minutes or until just cooked to your liking.
  2. For the coriander sauce, finely chop coriander, green chilli and garlic together on a board. Transfer to a small bowl and stir through half the lime juice.
  3. Combine pineapple, cucumber, spring onions, mint, cos lettuce and remaining half the lime juice in a large bowl. Toss to coat.
  4. Serve salmon with pineapple salad on the side and drizzle over coriander sauce.

Cooking Tip: Slow baking is a foolproof method for melt-in-your mouth salmon. It may not look like much has changed when you remove it from the oven, but don’t be tempted to leave it in for longer as you’ll lose that perfect just-cooked texture.
