Whipped feta, prosciutto & blueberry toasts

  • 100g Danish feta
  • 50g Greek yoghurt
  • 4 thick slices of sourdough bread
  • 1 tablespoon olive oil, plus 1 tablespoon extra
  • pinch of salt
  • 4 thin slices of prosciutto
  • 125g blueberries
  • ¼ bunch of mint, leaves picked
  • juice of ½ a lemon
  • 1 teaspoon ground sumac


  1. For the whipped feta, place feta and yoghurt in a small food processor. Blitz until smooth.
  2. Heat a large frying or griddle pan over high heat. Brush sourdough with one tablespoon oil. Toast for 1-2 minutes either side or until lightly crisp and charred. Season with a pinch of salt.
  3. Just prior to serving, spread toasts with whipped feta. Arrange prosciutto, blueberries and mint leaves on top. Drizzle over remaining one tablespoon oil, then finish with a squeeze of lemon juice and sprinkle of sumac.

Cooking Tip: This is a fantastic make-ahead canape for silly season entertaining! The whipped feta and sourdough toasts can be made earlier in the day, so you simply need to assemble and serve as your guests arrive.

Nutrition Tip: If you’re not great at eating your two serves of fruit per day, a tasty trick can be to use fruit in savoury dishes! Try using fresh fruit in zingy salsas, roasted fruit with show-stopper meats or dried fruit in grainy salads.
